VBR Foodie Rave: Gracias Madre
I grew up in El Paso, Texas, so I luuuuuurve me some tasty-ass Mexican food! Unfortunately, Mexican food is a bit tricky to find vegan-style (oftentimes there’s lard in the chips, chicken broth in the rice, etc.). I’m super grateful to live in the Bay Area where we’ve got TWO fantastic 100% vegan Mexican restaurants, Flacos in Berkekley and Gracias Madre in S.F.!
Today, I wanna focus on Gracias Madre… I’m gonna let these photos speak for themselves, but lemme just quickly say that errthang was HELLLLA tasty!!).

QUESADILLAS DE CAMOTE – Sweet potato and caramelized onions folded into tortillas with cashew nacho cheese and pumpkin seed salsa

ENCHILADAS CON MOLE – Spicy mole enchiladas topped with mushrooms and cashew cheese, served with sautéed greens and beans
