Healthy Vegan Pumpkin Muffins [RECIPE]
It’s almost fall, betches!! Yep, I’m eager for sweater weather, beautiful color-changing leaves, fireplace snuggles, and of course, pumpkin errrthang!! In anticipation of welcoming the greatest season of the year, I proudly present my scrumdiddlyumptious recipe for healthy (i.e. can be made low-fat & refined sugar-free) vegan pumpkin muffins! Enjoy!
Healthy Vegan Pumpkin Muffins
- 1 3/4 cups whole wheat or all-purpose flour
- 1 1/4 cups coconut sugar (or sweetener of choice)
- 1 tbsp baking powder
- 2 1/2 tsp pumpkin pie spice
- 1 cup canned pureed pumpkin
- 1/2 cup vanilla almond milk
- 1/2 cup vegetable oil (can sub applesauce)
- 2 tbsp maple syrup
- pinch of salt
Preheat oven to 400°F. Mix your dry ingredients, and then mix your wet ingredients in a separate bowl. Combine both wet and dry ingredients and mix super duper well. Fill your muffin cups 2/3 full and bake for ~20 minutes or until cooked all the way through (best to check it with a toothpick). Finally, shove that yummy ish in yo’ face! xo
