EatPastry’s New Chocolate Cake Mix
Yo, fellow sugar fiends, I have some ab fab news for y’all: EatPastry, makers of the BEST vegan cookie dough (i.e. dairy-free & egg-free, so you can eat that ish RAW), are releasing easy peasy gluten-free baking mixes for chocolate cake, biscuits, and muffins. All three are “single serve” meaning they make 6 cupcakes, biscuits, or muffins. And icing on the cupcake (how punny, right?) – they’ll be sold for $2.99 or less. Single use, small batches, hella good deal! YES PLEASE! In addition to being gluten-free and vegan, they’re also non-GMO verified by the Non GMO Project. Expect to see these bad boys rollin’ out at Whole Foods and other local health food stores soon!
I was lucky enough to preview these yummies (praise the blogging gods), and they were all dee-lish! I’ll be focusing on their chocolate cake mix in this post, but stay tuned to VBR for write-ups on their other tasty treats!
Basically, the mix only required that I add non-dairy milk (I used vanilla almond milk) and oil… I actually subbed out oil for applesauce (low-fat alternative), and you never would have known the difference. I topped my chocolate cupcakes off with a dollop of coconut whipped cream and a sprinkling of cocoa powder. Seriously, these cupcakes were suuuuuper moist, fluffy, and mad tasty! And I’m usually a weirdo when it comes to anything gluten-free, because I feel like GF = gritty and not-so-great, but the texture and consistency of these were ace! I’m so grateful the mix was “single serve” because if it made 12 or 24 cuppies, I surely would have eaten them ALL! 😀
