Wacky Cake (also commonly known as Crazy Cake) was a big deal during the Great Depression because it was super easy to make on the cheap (YESSS!!!). It doesn’t require eggs, milk, or butter, making it vegan by default! It happens to be my favorite chocolate cake recipe – it’s easy to whip up, and the cupcakes are the fluffiest, moistest, and most delicious!

Chocolate Wacky Cake

Cake ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 cup vegan sugar
  • 4 tbsp unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup water
  • 1 tsp vanilla extract
  • 1 tbsp apple cider vinegar
  • 6 tbsp vegetable oil

Topping options:

I used sugar-free strawberry fruit spread, dried coconut, and kiwi slices. Feel free to top these bad boys with whatever your heart desires – icing, whipped cream, peanut butter… anything goes!

Preheat oven to 350 degrees.
Mix dry ingredients in a bowl. Add wet ingredients and mix thoroughly. Evenly distribute your batter into the cupcake liners and bake for ~30 minutes. Let cool, and then shove ’em in yo’ face! Enjoy! xo
