Vegan Chocolate-Covered Rice Crispy Treats [RECIPE]
Ah, rice crispy treats… they bring back fond childhood memories of loving life and being happily gacked on ooey gooey, chewy, marshmallowy love.

Vegan Chocolate-Covered Rice Crispy Treats
- 3 tablespoons Earth Balance
- 1 package of Dandies vegan marshmallows
- 6 cups Trader Joe’s Crisp Rice cereal
- India Tree Natural red food coloring (optional)
- 1/2 cup vegan chocolate chips
- 2 tsp vanilla almond milk
- cookie cutters (optional)
Melt Earth Balance in a pan over low heat. Add vegan marshmallows and stir until melted. I added a bit of natural red food coloring at this stage. Remove from heat and add Crisp Rice cereal. Mix super duper well until all the crispies are coated with marshmallow goodness.
Place the mixture in a medium sized pan and press down using parchment paper. Let cool for 15 mins and then cut out fun shapes with cookie cutters. Melt chocolate chips with almond milk in a double broiler over medium-high heat. Once fully melted, dip yo’ crispy cut-outs and get your sprinkle-sprankle on with some colorful candy confetti! Omnomnom!
