Refined Sugar-Free Chocolate Chia Seed Pudding [RECIPE]
I’m constantly looking for ways to satisfy my sweet tooth without sabotaging all my goals of hot boditude. 😉 Seriously, though, I’ve been on a healthy kick lately, working out 5ish days a week, eating cleanly (for the most part), and keeping my sugar-crack binges to a minimum. So, this chocolate chia seed pudding totes does the trick when I’m jonesin’ for some sweet ish. It’s loaded with omega-3 fatty acids, antioxidants, protein, fiber, calcium, vitamins, minerals, etc., so it’s actually good for you!
On a side note, do y’all remember Chia Pets from the ’80s? (hardcore dating myself and giving zero fox) When did chia seeds shift from fro-y novelty, plant thingies to superfood superstars? Ha, such a trip! Anyhoo, it’s pudding time!
Chocolate Chia Seed Pudding
- 1 1/2 cups unsweetened vanilla almond milk
- 1/3 cup chia seeds
- 1/4 cup unsweetened cocoa powder
- 1/4Â cup maple syrup (sweeten to taste, can sub pitted dates)
- pinch of sea salt
Place all ingredients in a medium size bowl and whisk until well blended. Cover and place in refrigerator for 5 hours (overnight) until pudding thickens. Top with fanciness like fresh fruit, granola, coconut flakes, whipped cream, and then NOM NOM NOM. It’s guilt-free, healthy, and delish! xoxo
