Simple and Delicious Vegan Banana Bread Recipe
Bananas are one of my top three favorite fruits. I personally love eating them when they’re a bit unripe, a teensy bit on the green side, with zero brown spots. Anyone else team green banana? Haha 🙂 As soon as my nanners start to get hella ripe, I let them do their thang, because I know banana bread is in my future (the only silver lining to bananas gone brown, imho).
There are several recipes for vegan banana bread, but this one is my all-time favorite. It’s super simple, and the banana bread comes out perfectly moist and delicious. Highly recommend!
Ingredients:
- 1 3/4 cups flour (I use unbleached, all-purpose)
- 1/3 cup sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/3 cup melted coconut oil
- 1 1/2 cups mashed ripe bananas
- 1 tsp vanilla extract
- pinch of salt
Preheat oven to 350 deg F. In a medium sized mixing bowl, mash your bananas. Mix in coconut oil and vanilla extract. Then mix in the flour, sugar, baking soda, baking powder and salt. Batter will be a little thick and lumpy, but if it’s too thick, mix in a bit of non-dairy milk . Pour batter into a greased loaf pan. Bake for ~50 mins. Toothpick test it before taking it out. Remove from oven and let cool before slicing. Enjoy!
